It’s the last official weekend of summer—which means grilling, right?—so I wanted to remind you all of Part 5 of my Bountiful Bread Basket series, the Best Gluten-Free Hamburger Roll Recipes and Hot Dog Roll Recipes. And remember that Hamburger Roll recipes can also do double duty as sandwich rolls. I just updated this collection of recipes so be sure to scroll through to find one, maybe two, that you want to try right away!

You may think that labeling these recipes the “best” is a bit presumptive. I think you’ll change your mind once you read the rave reviews of these recipes! Be forewarned though … if you’re enjoying these rolls in a mixed setting (i.e., with gluten-free and gluten-full fare both being served) you may just have to fight people off from taking your homemade gluten-free roll instead of simply grabbing a gluten-full one out of a package.

No kidding! Find the recipeherethat works for you and get grilling!

Gluten-Free Hamburger Roll Recipes Plus Hot Dog Roll Recipes (1)

Note: Recipes are labeled as far as their degree of “free-ness” based on information provided. For example, I don’t normally label recipes “nut free,” as I don’t have expertise on the products that are truly nut free, but if the recipe creator originally labeled their recipe as nut free, I’ve included that info. But you may find that there are actually many more nut-free recipes here than I’ve indicated by my descriptions.

All recipes are gluten free, of course, but I used the bloggers’ recipe titles and some include “gluten free” in the name and some do not. But always read ingredients and product labels and do your own verification to ensure products are “free” to your own personal level of need.

Kylie shares her son’s endorsem*nt of these rolls as well as her description:“Ethan loves these rolls! They’re sturdy without being crumbly and are soft and moist. The sprinkling of sea salt and Italian herbs on top gives a great burst of flavour, too. As Ethan is always hungry (like every teenage boy), I’ve made them a decent size so that he can fit as many fillings as he likes in there!”

These “whole wheat-like” buns were born out of Jeanine’s sudden desire to eat a Sloppy Joe on a bun. She said that being able to top her bun with the “messy, beefy mixture” was “grand”! She uses deep dish mini pot pie pans. By the way, Jeanine is also the author of theexcellent resource/cookbookThe Everything Guide to Living Gluten Free.

Kate says: “These are great buns and are still tender the next couple days. They are firm enough to split and toast on the grill too. Now that’s what I call a BUN!” She uses muffin rings to make her buns. But as she notes, cleaned and washed tuna cans with the top and bottom lids removed also work great. Just be very careful with those cut edges!

Reader reviews:

  • “In 6 years of being gluten free, I have never made a bun that I could take out the next day, eat it without warming it up, and have it taste just as fresh as the day before. This is a fantastic recipe that I will be sharing with many people. THANK YOU!”
  • “Thank you Ali for this amazing recipe. I have been eating GF for 4 months now and I have tried many different bread and biscuit recipes and none of them have even come close to resembling regular bread. I decided to try your recipe for our hamburgers tonight and the buns came out perfect and tasted even better than regular store bought buns. You have restored my faith that I can still enjoy bread and eat GF. I can’t thank you enough. I will be making these buns regularly.”

Megan says: “These buns are best when used the day you make them, but they are still good the following day too. The day after baking they are still soft, not rock hard like some gluten free bread recipes.” She makes her own molds by forming aluminum foil around small bowls that she has on hand. One of her readers had success letting the buns rise in the muffin tin and then dumping them out onto a greased cookie sheet before baking.

Reader reviews:

    • “These are the best buns I have ever made in the last 6 years my husband has had Celiac. I have tried lots of gluten free breads and this is the best ever. My husband said they were excellent. Thank you so much. This is a real keeper.”

Jules says: “If you think great-tasting, easy-to-make, gluten-free hamburger and hot dog buns are impossible, prepare to be surprised! You can make them any size or shape you want, really. From Kaiser Roll size to sliders — when you make ‘em yourself, you can make ‘em just the way you want!” The key ingredient is gluten-free ale or non-alcoholic sparkling water, ginger ale, or club soda. One reader used hard cider. Jules’ latest book isFree for All Cooking and she also was responsible for the Gluten-Free Baking chapter of renowned celiac expert Dr. Alessio Fasano’s book, Gluten Freedom.

Reader reviews:

  • “I tried the light and airy buns today. There were 4 gluten-free people here and they loved them and thought the name was appropriate. So much better than the dense commercial buns.”
  • “Jules, this recipe is great using Woodchuck Hard Cider (which is gluten free) instead of the beer/ginger ale! You should have smelled my kitchen while these baked. I went with the flax seed alternative over egg again.”

Reader reviews: “Great hamburger buns! I made these for my wife, she LOVED them! She ate one plain just out of the oven. I taste the bun that she was eating and I could not tell between the gluten and gluten free version (when fresh) we will have left over buns tonight and advise the (day old) results, Great recipe!!!”

Pete and Kelli say: “We landed on a recipe that yields a moist roll with great crumb, and that doesn’t fall apart as you eat it. And in our opinion it’s the perfect amount of bread to hold your burger—we hate when a bun is so big that you feel like you’re chewing on a bakery and can’t find the burger and fixin’s buried in there somewhere.” They used a hamburger bun pan. See reader reviews for an alternative to using a pan—i.e., the “canning ring hack.” By the way, you’ll want to check out Pete and Kelli’s latest cookbook, Gluten-Free Family Favorites: The 75 Go-To Recipes You Need to Feed Kids and Adults All Day, Every Day!

Reader reviews:

  • “This is my 2nd batch of these, we really like them. We use them for sandwiches. I didn’t have a pan to cook them in so did some googling and found a post where a lady took wide mouth canning jar rings and laid them on a baking sheet with parchment paper spray with cooking spray and put the dough in the rings … they turn out perfect.”
  • “I made these the other day and was very impressed! You are spot on about them being the perfect amount of bread. I was a bit skeptical when I saw the picture–they seemed thin–but I was proved wrong. Love how they hold up with some messier sandwiches. Also, I liked how they defrosted and tasted after the first day. Another winner! I also used the canning ring hack. Worked perfectly.”

~ Light & Fluffy Gluten-Free Dinner Rolls (or Hamburger Buns) from Lynn’s Kitchen Adventures ~ gluten free, corn free (if you use xanthan gum that is corn free), dairy free, vegetarian

Lynn says she uses this same recipe for Hamburger Buns. For hamburger buns, you scoop out a larger amount of dough, of course, and you might have to bake them slightly longer than directed. Note that Lynn is also the author of The Gluten-Free Baking Mix Cookbook, which many have found to be a great gluten-free cookbook.

Reader review:

  • “OMGOSH!!! Thank YOU!!! I made these last night for the family and it was a BIG hit! I have had a craving for fluffy bread for the past year since going gluten free from intolerance, and these are Amazing! I didn’t think it was possible to have a Light and Fluffy, bread recipe!”
  • “I made these today and they are Amazing! I’ve searched for a roll recipe for my Celiac son for the holidays … these are perfect! I think I might sub olive oil and add a little rosemary for a different flavor for Thanksgiving. Thank you so much!”

~ Overnight Rolls from Free Range Cookies ~ gluten free, rice free, corn free (if you use xanthan gum that is corn free), nut free dairy free, egg free, vegetarian, vegan

Linda says: “You have to plan ahead for this one. But so worth it. Chewy like a sourdough and easy to work with, this bread can be made into rolls or buns. An overnight stay in the fridge enhances the texture and flavor of the bread by allowing the yeasttime to do its thing. Relaxing in the fridge is also good for the flours. Who doesn’t love chilling, right? So be sure to read all the instructions before you begin. Otherwise, you might do something silly, like preheat the oven or who knows what?”

~ Skinny Hamburger Buns from Go Dairy Free ~ gluten free, corn free (if you use a corn-free xanthan gum), nut free, dairy free, refined sugar free, vegetarian

Reader review: “I’ve made this recipe at least 10 times. I double it and it makes 6 buns. The real difference is using Trader Joe’s Everything But The Bagel Sesame Seasoning instead of just plain sesame seeds, it adds a saltiness and garlic kick. I love this recipe because I like the fact that the buns are thinner but also more dense, so they hold together well … I take tall Mason jars and put all the dry ingredients (excluding yeast, obviously) in them so I don’t have to measure that part out every time. I have free formed them and they’re fine, but I also found 5-ounce ramekins (set of six) on Amazon, they’re perfect for these buns and other dishes.”

You can use Kate’s recipe—the original Chebe, if you will—to make rolls of any size (and even pizza crust). She shared: “I made a batch of these cheesy biscuits for my parents who had never had them before. As the bread baked, I laid out the leftover Jalapeno Popper Dip, some ham and turkey slices, some sprouts and spinach, some cucumber slices etc. Basically whatever would make for great sandwich fixings.”

Reader review: “WOOHOO! This is a very good, quick, easy and scrumptious bread! We used our hamburger/muffin molds and they worked great as hamburger buns. They held up well to a burger and had a great flavor. Thanks for this recipe!”

Reader reviews:

  • “These are so good Shirley!! Ethan was well impressed….he said they were absolutely delicious!! I made my own red pepper hummus and used a tablespoon instead of 2 teaspoons of coconut flour. I also used your tip about using a ice cream scoop to put the batter on the tray.” and “They freeze wonderfully!! Just thaw and freshen them up in the oven and they turn out like they’ve just been baked!! So now I can make up lots of rolls and freeze them in zip-lock bags for whenever we fancy them. Thanks for such a wonderful recipe Shirley!! “
  • “They were incredible! I couldn’t believe they were vegan as they taste so cheesy! I’m a hummus nut, and the hummus gives the biscuits a moist tenderness that is hard to achieve in gluten-free baking.”

Danielle says: “These are strong and hold up to the biggest, messy burger you can concoct. They are still a little dense and not as fluffy as a standard gluten bun, but I’m pretty positive that there’s no way to achieve that with grain-free flours and without the use of yeast.”

Reader reviews:

  • “Just made these tonight. They were absolutely delicious! I have been grain free for a while now and the taste of these buns were out of this world! Thank you, thank you, thank you!”
  • “I made these tonight. We had our first intentionally grain-free meal with a grain-free bread replacement. Holy crap, they are amazing. These buns single-handedly convinced my husband and I to try Paleo. We are so excited to be able to eat foods we normally eat -like chicken sandwiches- while still maintaining a Paleo lifestyle. Wow!!! 5 stars and 4 thumbs up!”

Sarah says she decided to try her hand at grain-free, nut-free buns when her mother-in-law visiting and the results were “so yummy that my husband asked if I can make him these buns every time we eat hamburgers. The answer was yes because they are quite easy to make! This recipe makes two buns.” Sarah is the author of a series of resource books on paleo living, starting withThe Paleo Approach: Reverse Autoimmune Disease and Heal Your Body, which is a comprehensive, highly-rated book that draws upon her scientific background and her ownpersonal health story.

Reader review: “Made these last night and can confidently say they are the BEST paleo buns I’ve ever made/tasted. I swapped the cream of tartar and apple cider vinegar out for 1 3/4 tsp lemon juice… and also used coconut oil instead of palm shortening. They were crisp on the outside, soft on the inside and my non-paleo partner couldn’t believe how AMAZING they tasted! Thank you.”

Reader reviews:

  • “These are great! You’re right they don’t fall apart like a lot of other recipes. I usually use those other ones for things that I would normally make corn bread with because it’s great for those dishes. However, something like a burger or pulled pork sandwich (had last night) calls for something to hold the sandwich together and these did the trick! I actually don’t own a pan for this and just used parchment paper on a baking sheet and spooned enough for a bun onto the sheet for each spot and they baked right up!”
  • “These hamburger buns are FANTASTIC. Thank you for this recipe. I purchased the pan and followed the recipe as written and I had the best burger/bun in 3 years, since becoming gluten sensitive. I am making them on a regular basis. This bun has a pleasant taste and doesn’t crumple like other gluten free buns that I’ve purchased.”

What is the difference between a hot dog bun and a roll? ›

Buns typically have a crispier crust because of the space between them during proofing. Rolls are typically proofed and baked right next to each other which enables them to have a softer crust and to pull apart effortlessly.

How do you use hot dog buns for burgers? ›

For this set up, you rip a hot dog bun across the middle (like you do in the TPM), and then proceed to unfold and rip just one of the halves in half, along the natural bun seam. You then build a burger on just one quarter of the bun and top it with another.

Are hamburger buns and hot dog buns the same? ›

Homemade hamburger buns

Shape each piece into a ball. For hamburger buns, flatten the balls into 3 1/2" disks. For hot-dog buns, roll the balls into cylinders, 4 1/2" in length. Flatten the cylinders slightly; dough rises more in the center so this will give a gently rounded top versus a high top.

Why are New England hot dog buns different? ›
