Congo Bars Recipe

I recently went on a Northeast road trip and I met up with some of my old high school friends. My friend, Liz, brought the most delicious Congo Bars. I had never had them before. They looked like blondies but I have never liked blondies because, to me, they are brownies without the chocolate and who wants that? But when I tried her Congo Bars, they were delicious! They tasted like chocolate chip cookies but in an amazing, decadent and moist bar form. I was hooked! I begged her to share her recipe and she, being the wonderful friend she is, sent it along right away. Such a sweetie. So this is Liz’s congo bar recipe with a little less sugar because I am always trying to keep things just a little healthier!

Prep Time: 5-10 minutes
Cook Time: 30-35 minutes
Serving size: approximately 2 inch by 2 inch squares

Congo Bar Simple Ingredients:
2 1/2 cups all purpose flour
2 1/2 tsp Baking powder
1/2 teaspoon salt
2/3 cup unsalted butter, room temperature
2 cups light brown sugar (not packed down)
3 eggs, beaten
1 tsp vanilla
1/2 cup walnuts chopped (optional)
1 10 oz bag chocolate chunks

How To Make Congo Bars :

First I unloaded my Kroger groceries and put the ingredients I needed out on the countertop. Then I got out a large mixing bowl, a medium mixing bowl, a sifter, and a 9 by 13 Pyrex dish.

Preheat the oven to 350 degrees. Grease 13″ x 9″ pan using butter.

In a large bowl, mix butter and light brown sugar until fully blended and smooth. Use a hand mixer or do it by hand as you prefer.

Add in the vanilla, and eggs and blend until smooth.

Place a sifter into a separate bowl, and add flour, baking powder and salt. Mix and sift the dry ingredients into the medium bowl.

Gradually stir in dry ingredients to wet. Mixture will be fairly thick.

Stir in chocolate chips and walnuts (if using) and scoop into greased baking dish.

Bake for 30-35 minutes. Remove from oven and place on a wire rack. Cool for 15 minutes and then you can slice and serve warm or allow to cool even more for a little firmer congo bar. Congo squares are so soft and chewy when they are still a tad bit warm so that is my absolute favorite way but they are still amazing when they cool completely.

These are so decadent! I bet this Congo Bar Recipe becomes a new family favorite! They are delicious all by themselves or served with a scoop of vanilla ice cream.

Baking Notes:

I used 70% semi sweet dark chocolate baking chunks because I think they taste the best and are the healthiest for you with less milk and sugar but if you prefer you can certainly substitute white chocolate or milk chocolate chips.

Dark brown sugar will work just fine in place of light brown sugar.
