Ingredients

Chicken: Reach for a lean and skinless chicken breast for this recipe. Now you can use other cuts but I find the boneless skinless chicken is best.

Italian Seasoning: This is a blend of herbs that is going to add a lot of depth to the chicken.

Garlic: Fresh minced garlic is used to help offer complexity to the chicken. You can also buy jarred minced garlic for a shortcut.

Salt and Pepper: You will season the chicken with additional salt and black pepper.

Chicken Broth: You will use chicken broth for the base of the sauce. It will help to tenderize the chicken as well.

Heavy Cream: Heavy whipping cream is going to richen the sauce and create a creamy texture.

Spinach: You will add in some spinach at the end of cooking to cook till it is wilted down. It will add some earthy tones but also nutrients and color to the chicken.

Sundried Tomatoes: You can find these at the store, and they offer a sweet and tangy flavor which makes this dish over the top in the flavor department.

Parmesan Cheese: I love parmesan as it offers a nutty but also tangy twist of flavor. Chicken and parmesan go together nicely.

Lemon Juice: The lemon will balance out the flavors in this chicken dish. The citrus truly completes the recipe.

Variations to Recipe and Substitutes

Vegetables: Consider adding in some vegetables for added flavor. Artichokes, asparagus, mushrooms, bell peppers would add lots of flavor.

Cheese: Pecorino or Romano would be a great swap for the parmesan cheese. Or you can opt for a dairy-free substitute if you need it.

Protein: Use any type of boneless chicken cuts you would like. You can do bone-in but just know you have to adjust the cooking time. Or add in some shrimp for a double meat dish. Or make a Tuscan salmon with salmon filets. Just use an instant-read thermometer to ensure you cook the salmon or protein fully.

Expert Tips For Success

  • Season to your liking. You can add more or less of the Italian seasoning, salt, pepper, and other ingredients.
  • Make sure to use a meat thermometer to ensure the chicken reaches the internal temperature of 165 degrees. This is important to ensure you cook your chicken fully and remove it from the pan once it reaches the proper temperature to prevent overcooking.
  • Use a heavy-duty skillet so you get an even cook on the chicken and the sauce. Cheaper pans can create hot spots and you get an uneven cook on the food.
  • You want to create a nice sear on the chicken in the large skillet. To do so heat on medium heat and cook 2-3 minutes on one side to get a golden brown color to the chicken. This adds tons of flavor to the skinless chicken breasts.
  • The browned bits in the pan can be scraped when you add broth and use a wooden spoon to remove them from the pan. It will make the cream sauce ingredients even more flavorful.
  • If your boneless chicken breasts are too thick, place the chicken in a Ziploc bag or between plastic wrapand use a rolling pin to help pound out the chicken to make it thinner. That will help cook chicken quicker and more evenly.

Storing

Refrigerate: Refrigerate any of the chicken and sauce you do not eat in an airtight container. The chicken will be stored for 3-4 days in the fridge. Then reheat as you would like.

Freezing: You can also freeze leftovers for 2-3 months. Place in a freezer-friendly container and then thaw in the fridge 24 hours before you plan to eat. Or defrost and reheat straight from the freezer.

Can I use bone-in chicken for this recipe?

Boneless chicken is the typical cut of chicken for this recipe, but you can swap it with a bone-in chicken. Just adjust the cooking time. Bone-in chicken takes longer to fully cook.

Can I use fresh tomatoes instead of sundried tomatoes?

Fresh tomatoes can be substituted for sundried tomatoes in the recipe. Just dice up the fresh tomatoes and saute them in the pan to soften them up a bit.

Save your S'mores from the Easter basket and make up this Peeps S'mores dessert. This is a tasty and satisfying dessert the whole family can enjoy. Oven s'mores or microwave friendly.

Ingredients

  • 2 graham crackers broke in half
  • 4 Peeps
  • 8 squares Hershey's chocolate

Instructions

  • Take a baking sheet and line with foil or a baking mat.

  • Break graham crackers in half. Place them on the baking sheet.

  • On one side add chocolate and the other Peeps.

  • Bake in a preheated oven for 2-3 minutes. Just enough to heat up the chocolate and marshmallow.

  • Remove from the oven and then smash the graham crackers and marshmallows together. Then eat and enjoy.

Notes

Microwave – Add the s’mores on a plate, microwave for 20-30 seconds. Then if needed to be warmer reheat till warm.

Chocolate You can use whatever your chocolate you want. White chocolate, semi-sweet, etc. Now, you can use more or less chocolate just make sure to not add too much or it will ooze over.

Cookies – You could use a shortbread cookie instead of graham crackers or other cookies.

Ingredients

  • 2 Tablespoons Oil
  • 4 Chicken Breasts
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Minced Garlic
  • Salt and Pepper to taste
  • 1 cup Chicken Broth
  • 1 cup Heavy Whipping Cream 35%
  • 1 cup Spinach
  • 1/2 cup Sundried Tomatoes oil drained
  • Parmesan Cheese to taste
  • 2 Tablespoon Lemon Juice

Instructions

  • Heat a large skillet on medium heat with a little oil in the pan.

  • Season your chicken with the salt, pepper, and Italian seasoning. Do both sides of the meat. Then place the chicken in a single layer in the pan.

  • Sear one side for 4-5 minutes or until golden brown. then flip and repeat on the oher side of the chicken. You want to ensure the chicken is fully cooked. The internal temperaure should read 165 degrees F.

  • Increase the heat to medium-high, and add in the chicken broht. Use a woodne spoon to lightly scrape the botom of the pan to remove any stuck on bits.

  • Next you will stir in the heavy cream slowly, and reduce hte heat to medium. Alllow the mixture to simmer and reduce by half. This takes around 8-10 minutes.

  • Add in the sundried tomatoes and spinach, and cook until the spinach is wiled.

  • Dish up the chicken, and top with parmesan cheese and some fresh lemon juice.

Notes

Chicken: Any cut of chicken can be used, but make sure the chicken fully cooks. Different cuts of bone-in chicken will take longer to cook.

Sauce: You can use half and half instead of heavy cream to lighten the dish a bit. I do recommend using a whisk to get a creamy sauce.

Lemon: The fresh lemon juice is optional but it will enhance the flavors tremendously.
